Château de Chassagne-Montrachet dates back to the late Middle Ages. In the 17th century, it belonged to the last Lord of Chassagne, Sieur Clermont Montoison. Today, it is family run by the Mimeur family, focusing on quality excellence

Domaine Bader-Mimeur Chateau de Chassagne-Montrachet Chassagne-Montrachet Blanc 2022

Grape Varietals & Region: 100% Chardonnay from Burgundy, France. Vines from Domaine du Château de Chassagne-Montrachet. Clay-limestone soil.

Taste Profile: A yellow color with golden highlights. Delicate woody nose, combining notes of white flowers and creamy pastry. On the palate, tension underpins the whole magnificently, enlivened by delicate aromas and a definite breed.

Winemaking process: Hand-picked grapes only, in crates of up to 30 kg. The whole bunches are pressed in a pneumatic press. The grape juice is then cold-settled before being gravity-filled within 24 hours. Alcoholic fermentation takes place entirely in barrels, using indigenous yeasts. The wine ages in French oak for 10 months, using 20% new barrels, undergoing regular stirring of the lees

Full-bodied fruit and spice, often with the ability to age. This style usually relies on new oak to impart vanilla driven characteristics. Malolactic fermentation & on lees ageing also contributes to the texture
