Sartori Rerum Recioto della Valpolicella Classico DOC 2021
A dessert wine made the hard way — grapes dried for months before they ever see a fermentation tank.
Grape Varietals & Region: A blend of 50% Corvina Veronese, 30% Corvinone, 15% Rondinella and 5% Cabernet Sauvignon, from selected vineyards in the hills of the Classico area in the northern part of Verona, Veneto, Italy. The soil is mainly clay and calcareous. Recioto della Valpolicella is the sweet forerunner to Amarone — both rely on the same appassimento drying technique, but Recioto stops fermentation early to preserve natural sweetness, rather than fermenting the wine fully dry.
Taste Profile: Lush, dark ruby in the glass, with a bouquet of fine cherry and blackberry jam against a subtle vanilla background. Ample black cherry flavours are supported by sweet tannins on the palate, with berry notes complementing the wine's gentle sweetness in balance with the tannins and slight acidity. Well-structured and smooth on entry, finishing long and decadent. Decant before the meal and enjoy alongside dessert.
Winemaking Process: Grapes are carefully selected, placed in small crates and dried in ventilated rooms for about 4–5 months before pressing. Fermentation takes place in stainless steel tanks and runs extremely slowly, lasting until late spring — which is what gives the wine its pleasant residual sweetness. The wine is then refined in large oak casks for 6 months.
Winemaker: Sartori di Verona has been a family-run winery in the Valpolicella hills north of Verona since the tail end of the 19th century, when Pietro Sartori began making wine there. The estate has stayed in family hands across generations since, building its reputation on the region's traditional appassimento method — drying grapes to concentrate sugar and flavour — the same technique behind both this Recioto and the estate's Amarone.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
