De Toren Book XVII 2020
Four bunches per vine, infra-red imaging to find them, and a wooden case with its own key — De Toren's most exacting Bordeaux blend.
Grape Varietals & Region: A blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec and Petit Verdot, from De Toren's Stellenbosch estate on the southern slopes of the Polkadraai Hills, overlooking False Bay. Infra-red aerial imaging is used to identify only the vines of the very highest quality, which are then hand-pruned to carry a mere four, perfectly balanced bunches each — a level of selection few Stellenbosch producers attempt at this scale.
Taste Profile: An opulent crème de cassis, fruitcake and fig-scented bouquet leads into a full-bodied, silky-smooth palate with real depth, concentration and complexity, all in a harmonious, balanced package. Blackberry, cherry and cassis fruit are joined by hints of raspberry, violets and baking spice, while the finish runs long and character-rich, closing on smoke, coffee, tobacco and wood spice. Previously voted South Africa's Best Luxury Wine. Best paired with a classic rack of lamb or a rich, slow-roasted lamb shank — decant at least an hour before serving.
Winemaking Process: Each bunch receives individual attention and specific manicuring through ripening before hand-harvesting and gentle hand-destemming by a small, select team. The wine is fermented and aged in new French oak, with an ageing potential of over 40 years. Every bottle from the roughly 1,000-bottle run is individually labelled and numbered by hand, and presented in a handcrafted wooden case with its own key.
Winemaker: De Toren was founded in 1991, when Emil and Sonette den Dulk left Johannesburg for the Polkadraai Hills above False Bay, intending simply to make a fresh start on a wine farm. Working with academics from Stellenbosch University, Emil dug a dozen sampling holes per hectare — treble the industry standard — to map the property's soils before planting Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Merlot and Malbec, the five Bordeaux varieties that built the estate's reputation. The name De Toren — "the tower" — refers to the gravity-fed cellar structure Emil designed to handle the fruit as gently as possible.
