This intellectual white needs time and a certain experience with natural wines - with the necessary portion of oxygen it is highly appetising and elegant on the palate
Grape Varietals & Region: Grecanico 50%, Insolia 50% from Fontane, Bastonaca, Vittoria (RG), South-East of Sicily. Organically managed vineyards grown on red soil, medium consistency; formed of sub-apennine sands of Pliocene origin, of limestone-siliceous nature.
Taste Profile: Rami is an attractive and at the same time very individual blend of Grecanico and Inzolia. Bright golden yellow with a slight cloudiness typical of an orange wine and with an initially restrained-reductive bouquet, then with some aeration sweetly fragrant of apricots, dried flowers and orange peel.
Winemaking Process: spontaneous on the skins with indigenous yeasts. Aged in concrete tanks and bottle.
Open tank fermentation, lees stirring, pumping over and racking can all play a role during vinification, while oxidative aging in allows gradual air contact with the wine. Oak barrels & concrete tanks are most often used for such styles, and the more intense styles are often made under flor
