Champagne Colette Bonnet "Pinot Blancs" Millésime 2018
A grower whose great-uncle helped fight the 1911 revolt that got this corner of Champagne recognised as Champagne in the first place.
Grape Varietals & Region: 100% Pinot Blanc from the Noé-les-Mallets vineyards in the Côte des Bar, grown on just 2.24 hectares of Kimmeridgian soil — the same limestone-rich ground that runs through Chablis, just further south.
Taste Profile: Bright colour with pale yellow-green hues. The nose opens with a bouquet of acacia and linden flowers accompanied by a fresh burst of lemon and very fine limestone powder. With aeration, the Champagne reveals the character of the Kimmeridgian terroir through notes of wild flowers such as buttercups and daisies, with hints of fresh pear and peppermint. The palate is mineral, with a creamy effervescence supported by citrus and white fruit acidity.
Winemaking Process: The must, after pressing, is sent to the Centre Viticole de Chouilly to be vinified under a model of minimum intervention that Colette established herself. The wine ages for over 36 months before release, finished at a dosage of 4g/l (Extra Brut).
Winemaker: Colette Bonnet's great-uncle Henri Barrois and grandmother Marie Barrois took part in the 1911 growers' revolt that won the Aube its recognition as part of the Champagne region. Colette picked up the family's vineyards at just 26, leaving Burgundy behind to convert them to organics and biodynamics — beginning the estate's official organic transition in 2006 and releasing its first certified-organic wine in 2011. She farms just 2.24 hectares around Noé-les-Mallets, planted to Pinot Noir, Chardonnay and Pinot Blanc, and has been releasing Champagne under her own name since 2009.

Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
