Grape Varietals & Region: 100% Pinot Grigio, averaging 30 years old vines from gravelly soils in Veneto, Italy
Taste Profile: The winery chooses not to dictate tasting notes, due to the naturally evolving style of the wine. But expect something with freshness, driven by topical fuit like mango & passion fruit, as well as savory gooseberry!
Winemaking Process: Hand picked grapes selected in the vineyard, followed by direct pressing of whole grapes. The must undergoes spontaneous fermentation for 20 days in concrete tanks. Aging on lees for 6 months under battonage, bottled unfiltered. After bottling, it rests for another 18months before release
