Tasanshu means "high acidity sake", and it gets that character from the rare #28 yeast. at acidity is balanced by umami and sweetness to make this a beautiful sipper. Brewed using Akishika's own-grown organic rice.
Flavours of apples and apple cider, rich and complex with layers of umami, combining sweetness and vibrant acidity.
