Txomin Etxaniz Txakoli Rose 2023
Grape Varietals & Region: This is a blend of 60% Hondarrabi Beltza 40% Hondarrabi Zuri from the Basque Country, Spain. Txomin is one of the most prevalent winemakers in the Basque Country, they were one of the major drivers of setting up the DOs within Pais Vasco
Taste Profile: This rosé is a zesty zinger, made predominantly from local variety red Hondarrabi Beltzer. Whilst traditional Txakoli can be lightly effervescent, this one shows just a hint of spritz, that melds beautifully with the acidity to create a dry, refreshing rosé of great character and personality. Lime leaf, sour cherry and green apple mixed with a chalky finish. Delicious.
Winemaking Process: The grapes are grown in vineyards located along the rugged coastline of the Bay of Biscay and are hand harvested to ensure the highest quality fruit. After being acerated for 12 hours on the skins, the juice is fermented in stainless steel tanks using indigenous yeasts to preserve the unique character of the wine. The maturation happens on lees until bottling
