Pouilly-sur-Loire's forgotten grape goes full party mode: three generations of the Chollet family turn old-vine Chasselas into a proper bottle-fermented fizz.
Grape Varietals & Region: Chasselas — the low-key, table-grape-adjacent variety that's been quietly growing in Pouilly-sur-Loire since long before Sauvignon Blanc took over next door in Pouilly-Fumé and Sancerre. It never gets the same fanfare, mostly because it ripens easily, crops generously and makes wines built for drinking rather than debating — which is exactly why the Chollet family decided it deserved a second life as a méthode traditionnelle sparkling. The fruit comes off the family's 14-hectare Loire Valley estate in Pouilly-sur-Loire, worked organically and biodynamically (both certified 2025) across three generations since Roland Chollet planted the first vines from scratch in 1960.
Taste Profile: Lively and unpretentious — think orchard apple and pear, a touch of white flowers, and the soft, saline lift Chasselas brings instead of Sauvignon's usual gooseberry snap. Fine bead, dry-leaning finish, built for aperitif hour rather than solemn contemplation — pour it before dinner, or alongside something salty and fried.
Winemaking Process: Made méthode traditionnelle — still Chasselas base wine, secondary fermentation and ageing on lees in bottle, then disgorged as a finished sparkling. Farmed under the same organic and biodynamic regime the Chollet family brought to the whole estate ahead of their 2025 certification.
Winemaker: Séverin Chollet handles the vineyard and winemaking, having returned home after studying oenology in Beaune to work alongside his father Gilles and mother Valérie; his sister Milène runs sales. It's the latest chapter of a family story that started with grandfather Roland, who built the domaine from scratch in 1960 — Gilles then expanded the vineyard holdings through the 1980s, and today Séverin and Milène are pushing the estate further into organic and biodynamic territory while keeping quieter corners of the vineyard, like Chasselas, in the spotlight.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
