Darling Cellars
The cool and temperate West Coast climate lends itself to a variety of different micro- and meso-climates which, along with the different soil types, lead to unique grapes which are guided into even more unique wines. With approximately 95% of all the vineyards being Unirrigated (dry land) and roughly the same percentage being bush vines (i.e. not trellised), this is as close as one can get to what nature intended for grapes to be.

Obtaining the environmental certification HVE 3 with the 2018 vintage has encouraged the team to continue our efforts in order to maintain biodiversity, reduce the use of chemicals, implement a balanced fertilization program and adopt better water management practices.

The winemaking philosophy of the domaine is wholeheartedly non-interventionist with the grapes meticulously sorted by hand to ensure only the very best end up in the finished wine. Reds and whites alike are fermented with indigenous yeasts to add extra character and authenticity. The young wines are then aged in 350 litre oak barrels with a higher percentage of new barrels for the Premier Cru and Grand Cru wines.

It all started in the early 1900s, when Joseph Pascal arrived in the town of Puligny-Montrachet to cultivate the land.Today the family-run estate has 15 hectares of vineyards spread over 4 municipalities (Puligny-Montrachet, Meursault, Auxey-Duresses, and Volnay).
