Dominio do Bibei is an ambitious project to craft artesian wines that expresses the spectacular Riberia Sacra appellation terroir through a natural winemaking approach.
Ribeira Sacra is one of the appellations in Galicia, northwest Spain, and is known for its steeply sloped, terraced vineyards. The grapevines have ages that vary between 15–100 years of age and are situated between 300–670 meters above sea level. The soils have a base of granite and slate, with some acidity, little organic matter, and a clay texture. The winery cultivates Mencía, Garnacha, Brancellao, Mouratón, Godello, Souson and Albariño grapes.
The winery itself is located in Manzaneda, Ourense, and was founded in 2000. The winery built underground facilities to minimise their visual impact on the gorgeous region of Spain. They also use bioclimatic systems for their cooling processes and utilises the natural slopes of their land for gravity powered vinification processes with the grape must and wine. Vinification is in a mix of different sized wood and cement (including some Nomblot eggs) and natural yeasts are used.
