Melissae is the name of the nymphs of honey, another substance associated with the divine world and intimately connected with the origins of wine. The choosing of this name is a tribute to the bees, for a wine with intense flowery aromatics that remind us of the nectar they collect. The grapes of Melissae come from their highest plot, which is also the residence of their bees.

Taste Profile: Aphros Melissae lives from a wonderful herbal intensity. Lemon thyme, mint and lemon balm. Camomile is the clear star in this sensory ensemble. A touch of acacia honey and orange blossom add balsamic and floral accents. The mash contact leaves a spirited appearance. Yet far from wild or overly marked by tannins. Simply a little fuller. The comparison to flavoured green tea is also valid here. The floral and herbal aromas are clearly recognisable. Yet it is totally light on its feet and super slender. Discreetly bitter nuances of camomile come through wonderfully.
Winemaking Process: Hand harvest & partially destemmed before stailess steel fermentation. Manual pressing followed by 3 months aging sur lies in concrete eggs and bottling unfiltered
