A youthful wine with a promise for longevity
Grape Varietals & Region: 100% Sauvignon Blanc from estate vineyards.
Taste Profile: An elegant mix of citrus flavors like Meyer lemon, key lime, and ruby grapefruit with light notes of wet slate and lanolin, and a subtle finish of gooseberry.
Winemaking Process: Grapes were harvested in batches according to optimal ripeness, with a portion (11%) being set aside to dry for 64 days in the Appassimento method. The wine was fermented and aged in stainless steel.
Full-bodied fruit and spice, often with the ability to age. This style usually relies on new oak to impart vanilla driven characteristics. Malolactic fermentation & on lees ageing also contributes to the texture
MLF is a process that results in reduction in acidity & the production of buttery texture & taste profile, often applied to more bodied styles of red & white wines
While not all creamy whites or rich fruity reds undergo MLF, and can adopt similar profiles from barrel ageing,
