Aasvoël is an Afrikaans word for a ”vulture”. This wine started off with the winemaker, Pieter Walser, being an “Aasvoël”, not able to buy the grapes on a regular basis from the farmer based in Helderberg, and waiting patiently in line for his share of the grapes.
Grape Varietals & Region: 100% Verdelho from a single vineyard situated on the Helderberg, Stellenbosch. 122 meter above sea-level on a West facing slope.
Taste Profile: This straw coloured wine has striking brilliance and thick tears. It has a distinguished nose with dried floral blossoms, fine herbs and conference pear. This is a mouth-filling wine, with lovely texture, ripe fruity acids, and a long, broad finish. It's a wine that would pair well with grilled fish, shellfish with oriental spices, eggplant parmigiana, or poultry in cream sauce as well as aged cheeses.
Winemaking Process: The grapes were picked at optimal ripeness and cooled overnight to 4 degrees celsius. The next morning the grapes were pressed as whole bunches. The juice underwent spontaneous fermentation in concrete egg shaped tanks and older French oak barrels. Deep winter the wine received one sulfur addition. 10 months on the leese, blended and bottled.
Succulent stonefruit with a citrus backbone characterises these wines. Typically, they have notes of tropical fruit, and come from warmer climates. A touch of oak during the winemaking process also helps to give some softness to the wine.
