Champagne Colette Bonnet Pinot Blancs Millésime 2018

Champagne Pinot Blancs Millésime 2018 by Colette Bonnet is the result of 100% Pinot Blanc from grapes from the Noë-les-Mallets vineyards, in the Côte des Bar.

Millésime 2018, the must after pressing is sent to the Center Viticole de Chouilly to be vinified according to a model of minimum intervention established by Colette. Aging for over 36 months and dosage of 4 g/l (Extra Brut).

Bright color with pale yellow-green hues. The nose opens with a bouquet of acacia and linden flowers accompanied by a fresh burst of lemon and very fine limestone powder. With aeration, the Champagne reveals the character of the Kimmeridgian terroir through notes of wild flowers such as buttercups and daisies and hints of fresh pear and peppermint. The palate is mineral with a creamy effervescence supported by a citrus (lemon) and white fruit acidity.

Recommended in combination with fish appetizers such as marinated salmon tartare and first courses such as risotto with asparagus.
