Bodega Cerron El Tiempo Que Nos Une 2023
Grape Varietals & Region: 100% Monastrell from a blend of 3 vineyards - Tirillas, La Muela, Las Pedreras in Fuente Alamo, a village in Jumilla, Spain. All the wine comes from calcareous soils that provide a marked salinity and refreshing sensation in the mouth despite being harvested at high ripeness.
These are more immediate vineyards that look towards warm areas and therefore have a more fruity component. A village wine that defines our landscape through three pillars: warm days, cold nights and limestone.
Taste Profile: Intense garnet red. Warm and ripe with notes of plums, black fruits, spices, black pepper on a delicate woody touch. A dense weave between silk and velvet, an elegant and fine monastrell, silky tannins, all with a long persistence.
Winemaking Process: Harvest and selection of grapes by hand. Spontaneous fermentation with 40% whole grapes in cement tanks simulating traditional wine presses. Gentle pressing and malolactic fermentation in 10,000-litre French oak vats. Ageing in the same vats for 10-12 months.
