Catherine Marshall "Finite Elements" Pinot Noir 2023
A Burgundian expression built from three Dijon clones grown on different shale soils.
Grape Varietals & Region: Pinot Noir grown in the cool Elgin Valley, South Africa, on deep red shales interspersed with ferrous-rich gravel — 20% Dijon clone 777 on red clay for structure, 30% Dijon clone 667 and 50% Dijon clone 115 on lighter, high-ferrous shale for fruit texture.
Taste Profile: Voluptuous and complex, with a bright core of cranberry, pomegranate and ripe, fresh cherry fruit, underscored by forest floor, truffle and earthy savouriness that develops with time. Dry, taut and fine-textured tannins support this Burgundian-style wine.
Winemaking Process: Bunches are destemmed with 70% crushing after hand sorting, then cold-soaked for 3 days to maximise colour extraction. Fermentation begins spontaneously in open-top fermenters, with the skin cap punched down daily to control heat and extraction over an average 20-day primary fermentation. The wine is pressed in a small basket press, with secondary malolactic fermentation completed in 300L and 225L French oak casks.

We hate the disappointment of opening an off-drinking bottle of wine – as much as a kid seeing their scoop of ice cream fall to the ground (Yes, it hurts).
Simply contact us within 7 days of receiving your wines to let us know why you’re not satisfied and drop off the remaining unused wines back to us. The bottle will have to be at least 3/4 full and the same wine the bottle is in (duh).
Once we verify that the the wine was corked or damaged, we will process the refund.
