Grape Varietals & Region: A blend of Viognier & Sauvignon Blanc from Tuscany, Italy. The name derives from a farm whose owners provided shelter for ageing priests who were no longer able to work in their parishes, a sort of “convent”. Later the name took on the meaning of "hill of wind".
Taste Profile: Aromatic and fruity nose, acacia, gooseberry, grapefruit, wild fennel and thyme, intense marine mineral trail. On the palate its fresh and creamy.
Winemaking Process: Fermented & aged in steel casks
A lot of the wines in this category comes generally come from higher altitude or cooler climate regions, and often have bright acidity, balanced with fruitiness that cam come with or without some level of sweetness.
They general have perfumed floral, honeyed & spice notes. For fuller bodied styles, they often have an oiliness to them
