An Italian dessert wine from the Marche region of Italy, it's a recipe that dates back to the 18th century, wine from selected varietals is mixed with the juice of cherries
Grape Varietals & Region: Montepulciano and Cabernet Sauvignon, Sour Cherries and Sugar
Taste Profile: The ripe sour cherries, with the addition of sugar, are placed in the sun in stainless steel barrels from June to September. The aromatic nectar produced is processed for approximately 12 months together with Montepulciano and Cabernet must, according to an elaborate recipe that has been handed down for generations
Winemaking Process: Cherries are picked & mixed with sugar, and left to ferment. During the grape harvest, the cherries are drained & fermented with the red wine must. Once fermentation is complete the cherry juice is added back in, and the product is left to age for another 6 months.
Characterised by notes of rich fruit jam/compote with a touch of spice, expect notes of prunes, plums, chocolate and spice.

Fortified wines are wines which have alcohol added to them, usually in the form of a neutral grape spirit like brandy. This was originally done to extend the longevity of wines, for the purpose of long journeys such as a the sailing routes of the East India Company
These styles are often sweeter as the fortification arrests fermentation early.
