Description
This wine is made from 100% Chardonnay grapes grown in vineyards located in the village of La Morra with a south exposure and low slope. The vineyard is approximately 20 years old and has an average density of 5000 vines per hectare. The soil is composed of clay and limestone, and the classical Guyot method with medium-short pruning is used for cultivation. Green harvest is also practiced to reduce grapes with a production per hectare of 7000 kg approx.
During winemaking, the grapes are harvested very ripe, meticulously selected, and stored in cold rooms at 0°C for a week. A short time of maceration at 6-8°C is followed by pressing all grapes, and the fermentation takes place spontaneously in stainless steel vats with temperature control at 15°C. There is no malolactic fermentation, and after fermentation, the wine is refined for 2-4 months in steel tanks, then bottled and refined again for another 2-4 months.
