Domaine Catherine & Pierre Breton Pierres Rousses Vouvray has a charming, direct and convivial personality that will captivate you. A racy, dry Chenin on a flint floor with a deep and textural palate.
100% Chenin Blanc. The fruit comes from 55 year old vines growing in the pierres rousses (clay with flint) soils of the Vouvray terroir.
Manual harvesting of the fruit with sorting in the vineyard as well as in the wine storehouse to avoid problems with grey rot. Pneumatic pressing twice for 3.5 hours. Separation of the clear juice from sediment after 24 hours in tank. Alcoholic fermentation in barrel over 1–2 years. The wine ages for 10 months in 400 litre barrels. Bottling in September with less than 2 grams of residual sugar and 40mg / L total SO2. Filtering the wine to eliminate any microbial risks to its stability, allowing them to add less sulfur.
