Taste Profile: Dormilona Orenji is a super friendly style of orange wine, the perfect set of training wheels if you're thinking about getting into skin-contact white wines. The blood orange, peach and lemon nose leads you to a subtly chewy and gently textured palate, which is stunningly balanced by a refreshing acidity. Kind of like grown-up Fanta!
Winemaking Process: Hand harvesting of the fruit. Fermentation on skins for 2 weeks in open fermenters and 8 weeks in a giant cement egg before pressing off to barrel and cement eggs for full malolactic fermentation. Racking of the wine, then a touch of sulphur is added to ensure there's no variation or oxidation before bottling. No filtering or fining.
Open tank fermentation, lees stirring, pumping over and racking can all play a role during vinification, while oxidative aging in allows gradual air contact with the wine. Oak barrels & concrete tanks are most often used for such styles, and the more intense styles are often made under flor
