Taste Profile: A beautiful ruby colour with floral and cherry aromas on the nose. Black fruit and soft spices are enveloped with smooth silky tannins.
Winemaking Process: The grapes are hand-picked, 100% de-stemmed and placed in vats. After a prefermentary cold maceration, the alcoholic fermentation begins. Punching of the cap is carried out during this fermentation twice a day.
The wine is then raised in oak barrels for 15 months (with 20% new oak). It is racked up to three times during this period and bottled after fining without being filtered to ensure all the aromas express themselves fully.
Easy drinking red wines with bright fruit aromas and low tannins. The wines are often released without much aging in tank, oak barrels or bottle, and are meant to be drunk early
These wines typically can be nejoyed without food, and are usually served cooler. They can be light bodied wines like Beaujolais, or light extraction styles that do not emphasize tannin & color extraction
MLF is a process that results in reduction in acidity & the production of buttery texture & taste profile, often applied to more bodied styles of red & white wines
While not all creamy whites or rich fruity reds undergo MLF, and can adopt similar profiles from barrel ageing,
