Taste Profile: Aromas of wild herbs, pear and some blood orange. Juicy and tart-fruity, it makes you look forward to the second after the first sip. A wine with a lot of substance, lots of surprises and a lot of pull.
Winemaking Process: The grapes were individually destemmed by hand and then fermented on the mash for 10 days. The free juice was withdrawn after fermentation and further stored in a half barrel for 8 months. The bottling was unfiltered, without any further interventions or additives. Sulphites were not added during the entire expansion period.
From the limestone character of Sancerre to the green, herbaceous Sauvignon Blanc of Marlborough, this style group often shows off cut grass and wet stone. Often associated with coastal regions or limestone based terroir, these wines are characterised with crisp acidity, mineraiity, citrus tones, with a hint of grassiness
