Domaine Cabissou Julienas "Bessay" is just a very elegant wine. Aromatic with a fresh minerals and almost steely red fruit nose. Good depth and supple concentration on the palate, closing in a lovely fresh finish and long haunting flavours.
100% Gamay. The fruit for this wine comes from a 1.3 hectare island of old vines that grow on a dramatic steep slope at 450 metres atitude in the lieu-dit of Bessay in Julienas. Blue stone terroir planted with high density, organic cultivation and low yields.
Semi-carbonic fermentation using native yeasts and whole bunches. Ages for 9 months in old barrels. Bottling without fining or filtration.
From Barolo to Bordeaux, these wines are steeped in tradition. The style covers a broad spectrum of flavor profiles, but tend to be elegant and structured and can be cellared for a long time.
These wines often have savoury tones of earth, bell pepper, tobacco, cassis, and are often medium to full bodied, with long finish & structured palattes
