Grape varietal & region: 100% Nebbiolo, from the Roero region in Piedmont, Italy.
Taste profile: This wine has a bright and fresh bouquet with notes of citrus, green apple, and a hint of bread crust. On the palate, it is dry, crisp, and refreshing, with flavors of lemon and pear, and a long, mineral finish.
Winemaking process: The grapes for this wine are hand-harvested and carefully selected. After pressing, the juice is fermented in stainless steel tanks at controlled temperatures. The wine then undergoes a secondary fermentation in the bottle, using the traditional method (Metodo Classico), where it rests on its lees for at least 24 months. The wine is then disgorged and aged for an additional 6 months before release.
