Bodegas Toro Albalá creates wines with 30% of grapes from their own vineyards and 70% coming from partner growers in Montilla-Moriles.
Taste profile: Don PX Pedro Ximenez is a thick, luscious young wine without oak ageing. Deep amber hue. Opens with a nose of exotic fruit and soft juicy mango. The palate has a lively tangy freshness that balances its oily texture and deep flavours. Shows concentrated flavours of licorice, raisins, dates and prunes with warm layers of toffee and caramel.
Winemaking process: Made with the must of sun-dried
grapes dehydrated into raisins, obtained via a hydraulic press, with partial fermentation and the subsequent addition of top quality wine alcohol. No oak ageing, the wine rests for a minimum of 12 months in stainless steel tanks. No filtering before bottling.
Characterised by notes of rich fruit jam/compote with a touch of spice, expect notes of prunes, plums, chocolate and spice.
