The Pignoletto grape originates from Emilia Romagna region in Italy, taking its name from ‘Pigna’, the Italian for pinecone, on account of its small, tight berry clusters.
Grape Varietals & Region: 100% Pignoletto from Geogrpahe. Australia. Grown at the Harvey Hills at the Wildwater vineyard.
Taste Profile: Nashi pear, with a zest of lemon and a saline edge. A crisp and refreshing sparkling.
Winemaking Process: Handpicked, minimal destemming to avoid berry crush prior to gentle basket pressing. Fermented in stainless steel and left on lees for several months prior to commencing secondary ferment in bottle. Left on lees in bottle for 14 months prior to disgorging
Light, citrus driven & fun, a lot of these sparklings tend to have floral or tree fruit aromas like green apples. In more crisp styles, they are often more floral or citrus driven, and can be slightly sweet in more apple or pear driven fizzante styles
