When a brewery in the Harima region agrees to use rice milled to 90% and forgo lab-made lactic acid, they gain access to a rare yeast and koji, isolated from trees and oerings at the Niwata Shrine, and may label their brew ‘Niwazake.’
An intensely avourful sake with rich and playful palate. It’s sherry-like with pleasing sweetness accompanied with gripping bitterness and a touch of acidity. A wonderful sipper.
