Grape Varietals & Region: 100% Pinot Meunier from the Prouilly commune of Vallee de la Marne in Champagne, France. The fruit comes from Massif de Saint-Thierry and Valée de la Vesle, where the vines are planted on silty limestone
Taste Profile: An expressive wine with aromas of old rose, apricot and leather. The palate shows real staying power, with a creamy texture combined with fine bubbles. Wax, sweet spices and a touch of oak add complexity, while yellow fruit contributes to the length of the structure, culminating in a softly licorice finish.
Winemaking Process: Fermentation in thermoregulated vats, followed by malolactic fermentation in stainless steel. Aging: About 7 years on the lees, to ensure complexity and structure to the wine.
