Grape varietal & region: Cascina Chicco Birbet NV is a sweet and sparkling wine produced in the Piedmont region of Italy. It is made using the Brachetto grape variety, which is known for its fragrant and fruity characteristics.
Taste profile: This wine is light pink in color and has aromas of ripe red berries, rose petals, and a hint of spice. On the palate, it is fresh and slightly sweet, with flavors of strawberries, raspberries, and a touch of citrus.
Winemaking process: The winemakers at Cascina Chicco use a combination of traditional and modern winemaking techniques to produce this wine. The Brachetto grapes are carefully selected and harvested by hand, then fermented in stainless steel tanks at controlled temperatures. The wine is then refermented in the bottle using the Charmat method, which gives it its distinctive sparkling character.
Cascina Chicco is a family-owned winery that has been producing wine in the Piedmont region for over 60 years. The winery is committed to sustainable and environmentally friendly practices, and all of their wines are made using organic and biodynamic farming methods.
Nectar-like sparkling wines, ranging from aromatic Moscato to rich, demi-sec Champagnes. Generally, they are lower in alcohol, and have honeyed, floral naunces
Arrested fermentation is the act of intentionally stopping fermentation before it's complete, usually by chilling the must down. This is often done to retain sweetness, and one of the more famous styles would be Moscato d'Asti
