Clos du Tue Boeuf Qvevri Sauvignon 2022

Grape varietal & region: Clos du Tue Boeuf Qvevri Sauvignon is a unique and exciting wine that combines the ancient Georgian Qvevri winemaking technique with the French Sauvignon Blanc grape.

Taste profile: The result is a rich and complex wine with notes of apricot, honey, and orange blossom, and a pleasant minerality. The extended skin contact during fermentation in the Qvevri gives the wine a lovely amber color and tannic structure, while the use of wild yeast adds a distinct funkiness.

Winemaking process: The grapes used in this wine were hand-harvested from a biodynamic vineyard and were fermented and aged in a traditional Georgian Qvevri, an amphora-like vessel made of clay. The Qvevri was buried in the ground, allowing for natural temperature control and a slower fermentation process, which allowed the wine to develop its unique flavors and aromas.
