Grape Varietals & Region: A classic Cape white blend of 59% Chenin blanc, 16% Clairette blanche, 10% Grenache blanc, 10% Viognier & 5% Verdehlo. The grapes are all sourced from vineyards situated on the northern slopes of the Paardeberg mountain growing in decomposed granite soils. Most of the vineyards are older bush-vines, unirrigated and low yielding
Taste Profile: The wine displays a stunning golden straw colour. Aromas of white peach, grapefruit, honeysuckle and citrus blossom emanate from the glass. The palate is rich on entry, packed with white peach and citrus flavours leading to a creamy mid-palate. There is a textured pithy finish with hints of toasted almonds and white pepper spice.
Winemaking Process: The grapes are picked into small crates and placed into a cold store overnight. The following morning the grapes are gently whole bunch pressed and the juice is settled overnight after which it is then run to 400 litre French oak barrels as well as a concrete egg for fermentation. The fermentation is allowed to start naturally and once completed the wine is topped and matured sur-lie for 10 months with regular lees stirring in French Oak, 22% being new. 20 % of this wine is fermented and matured in a concrete egg.
