Miles Mossop Chapter One 2022
Grape Varietals & Region: 100% Cinsault from a single vineyard site on decomposed granite soils in the Swartland, South Africa
Taste Profile: This wine has a vibrant cherry red colour. The nose is perfumed with beautiful rose petal, strawberry and cherry aromas. There are underlying notes of dried herbs. Flavours of fresh strawberries, ripe cherries and rose water are evident on the palate. The mid-palate is textured with hints of dried herbs leading to a dry finish with fine tannins.
Winemaking Processes: The fruit was harvested and cooled before a 5 day cold soak to start spontaneous fermentation. The fruit was fermented with 50% whole bunches & 50% destemmed & crushed in stainless steel tanks. After about 20 days on skins, it was drained & pressed into concrete tanks for malolactic fermentation, where it matured for 9 months before bottling
