Grape Varietals & Region: 100% Merlot from the Okitama region of Yamagata Prefecture, Japan
Taste Profile: Bright aromatic notes of cranberry & strawberries, with a pronounced herbal pyrazine finish. On the palate, it has a medium body with bright acidity, giving it a slight effervescence. medium tannins & short to medium finish
Winemaking Process: The grapes are de-stemmed and crushed, then fermented at low temperature for 60 days, with minimal use of paddles, and the lees cap keeps the air out of the tank. This gives the wine more body than a regular sealed MC, and also gives it more aroma and gentleness than regular fermentation
