Grape Varietals & Region: 100% Chardonnay from the single plot of "Le Temple" in Nanteuil sur Marne. It's soils are composed of clay, silt, and chalk and are bordered by the peaceful waters of the Marne. The vines have an average age of 35 years, have been cultivated without pesticides since 2009, and have been certified organic and biodynamic since 2014
Taste Profile: A sparkling wine sculpted with a citrusy bouquet, floral notes, and hints of brioche and sweet spices. On the palate, it is vibrant, pristine, and svelte. This Champagne boasts a fine and enduring bead, a flavorful yet refined progression, and superb minerality.
Winemaking Process: Grapes are handpicked in the vineyard, and the grapes are vinified, 66% in stainless steel and 33% in oak barrels, with indigenous yeasts. This is followed by a second fermentation in the bottle, in the champenoise style, with an ageing period of between 24 and 30 months.
