Bodega Cerrón La Servil Monastrell 2021

Grape Varietals & Region: 100% Monastrell from Jumilla, in Murcia, Spain. La Servil comes from vineyards lying 960 metres above sea level. These are old vines, aged 60-70 that are planted on limestone soils and cultivated according to ecological principles. 

Taste Profile: Made by a new project with old roots, La Servil is a smooth red wine with an intense nose of ripe red fruit combined with toasted notes, spicy touches and mineral sensations. On the palate it is fresh, flavoursome and well structured. A wine with a marked acidity, mature tannins and a long, persistent finish.

Winemaking Process: In the winery, the destemmed and crushed grapes undergo a light maceration. La Servil then spontaneously ferments with native yeasts in wooden conical vats. The wine then ages in 5000-litre foudres and used 500-litre barrels for 12 months. Finally, it is bottled without filtering or clarifying.
