A purist’s Cabernet Sauvignon that will reward

Grape Varietals & Region: 100% Cabernet Sauvignon, estate grown on Margaret River (Wilyabrup) vineyards

Taste Profile: This small batch of Margaret River Cabernet Sauvignon displays benchmark aromas of cassis and bayleaf as well savoury note of black olive and after 8 mint. The palate is plush yet elegant with notes of cocoa powder and cigar box. maturation in fine French oak barriques adds complexity and structure: a purist’s Cabernet Sauvignon that will reward carefull cellaring over the next 10 years

Winemaking Process: Machine harvested & fermented in concrete open fermenters, hand plunged twice daily. Wild yeast fermentation, pressed after 21 days & transferred to 30% new French oak

Shouldered & Powerful Reds

Powerful modern reds with the ability to age. They tend to be very intense, with ripe fruit, firm tannins & drinkability either young or cellared.

They often have notes of forest floor, blackcurrant, mint & eucalyptus
