Bodegas Toro Albalá Don PX Pedro Ximenez 1990

Grape varietal and region: 100% Pedro Ximénez. Bodegas Toro Albalá creates wines with 30% of grapes from their own vineyards and 70% coming from partner growers in Montilla-Moriles.

Taste profile: Dark chestnut, iodized when shaken. High intensity. Candied fruits, raisins, dates, fig bread and orange peel aromas stand out. Roasted notes such as coffee, tobacco, and a touch of grape stalk are also noticeable. Voluminous entry, well-balanced sweetness and acidity, slightly bitter.

Winemaking process: Made with the must of sun-dried grapes dehydrated into raisins, obtained via a hydraulic press, with partial fermentation and the subsequent addition of top quality wine alcohol. No oak ageing, the wine rests for a minimum of 12 months in stainless steel tanks. No filtering before bottling.
