La Brasserie Fantôme Saison
This is the flagship beer from Dany Prignon's Brasserie Fantome.
The brewery is a rustic stone cottage tucked away in the very rural village of Soy in the Belgian province of Luxembourg.
The Fantome name and imagery comes from the legend in the nearby town of La Roche-en-Ardenne, which tells of the ghost of the late Countess Berthe de La Roche, who it is claimed still wanders amidst the old castle ruins.
Almost all of the beers brewed at Fantome are in the saison/farmhouse ale style. And in true eccentric style, various beers are brewed with a vast array of interesting and downright random ingredients.
It pours a hazy golden straw colour with an aroma full of earthy funk and musty farmhouse goodness. Flavours are of strong citrus, bready malt, grass and hay, more background fruitiness and a slightly sour hint. Carbonation is quite high, and the mouthfeel is almost chalky and bone dry.
This beer is amazingly complex, and totally belies its 8% ABV. A true masterpiece.
