Bodegas Saura Cauro Ventum 2022

Grape Varietals & Region: 100% Garnacha from Bullas in Murcia, Spain. The Mediterranean climate is influenced by the altitude of the area, with short but harsh winters with episodes of snow and hot summers during the day and cool at night, a factor that positively favours the quality of the grapes. The vineyard is located at an altitude of about 600-900m above sea level, with a goblet formation on light, loamy soils with good drainage. At the foot of the Sierra de las Cabras, there is abundant flora and fauna that favours the incorporation of nutrients and also yeasts that will intervene in the winemaking process

Taste Profile: Very bright ruby ​​red in colour. The nose is full of fresh, ripe red fruit with a lot of cleanliness and clarity. On the palate it is fresh and light but with density, very balsamic, with aromas of rosemary, thyme and pine needles. A straightforward and uncomplicated wine to accompany our appetizers and spoon dishes every day.

Winemaking Process: The production is very traditional and 50% of the grapes are destemmed with whole bunches. Fermentation takes place in limestone tanks from a quarry near the winery, with two pumping overs per day. Average maceration lasts 10 days. After pressing, the wine is transferred to an oak foudre where the alcoholic fermentation ends and malolactic fermentation takes place. After a slight clarification, it is bottled unfiltered.
