As the pH rises, the last approximately 10% of the juice is drawn into stainless steel vats for the white port. When the fermenting juice reaches 1° Beaumé, brandy is added to stop fermentation. The port is then stored in small wooden casks and matured at La Rosa's own lodge, with the final blend drawn from stocks averaging 2–3 years of age.
