Paşaeli is not the only cultivator of Sidalan — Suvla also grows small amounts — but is the only winery currently making a 100% Sidalan wine, and not much of it either, given the tiny vineyard size in Kaz Dağları. A big believer in growing things where they are native, founder Karagözoğlu set about collecting vineyards where Turkey's native grapes thrive naturally — extremely rare varieties like Sidalan, Kolorko, and Çakal among them. \u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003e\u003cstrong\u003eTaste Profile:\u003c\/strong\u003e Balanced acidity, flinty, with notes of green apple and pear, and a hint of yeast. Uniform, fine perlage, with a fragrance of fruity and floral notes on the nose. The palate is elegant and mild, long-lasting and dry on the finish. Pale in colour, the nose is aromatic with rich notes of red apples, pear cider, daisies, and herbal character, with a strong mineral backbone. On the palate, tart, bright, and vivacious, with lightly toasted hazelnut taking the flavour profile toward an apple-pear crumble, buoyed by generous fizz and citrus acidity. \u003c\/p\u003e\n\u003cp class=\"font-claude-response-body break-words whitespace-normal\"\u003e\u003cstrong\u003eWinemaking Process:\u003c\/strong\u003e Grapes were pressed and fermented in stainless steel tank, then bottled while fermenting with no fining or filtration. Alcoholic fermentation finished in the bottle, trapping CO2 as bubbles to make the wine naturally sparkling. The wine remained in contact with the lees for 6 months, then was manually disgorged. As winemaker Işık Gülçubuk describes it: \"I like the idea behind pet-nat, that it is low intervention, wild and fun.
