Paşaeli — founded in 2000 by brothers Seyit and Gino Karagözoğlu, originally fine-wine importers before they turned to their own production — built the winery around exactly this kind of project: championing indigenous grapes that had been sidelined in favour of international varieties.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eTaste Profile\u003c\/strong\u003e: Deep, dark red in the glass with a gentle fizz. Black cherry and cassis up front, laced with laurel, violet and drier woody herb notes; on the palate it turns toward balsamic, candied violet and cooked plum, finishing with a pleasantly bitter snap.
