Because it is made without inputs outside conventional appellation boundaries, it carries the Vin de France (VdF) classification.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTaste Profile: \u003c\/strong\u003eA deep, smoky, and mineral-driven expression of Gamay that balances a slightly sun-drenched (solaire) profile with brilliant freshness. The 2022 vintage opens with an aromatic nose of small red berries, dark fruits, and a touch of wild strawberry (fraise tagada). The palate is incredibly savory and highly digestible (sapide), offering fine, melted tannins, vibrant acidity, and a subtle touch of natural carbon dioxide (fizz) upon opening. The hand-picked grapes undergo an entirely spontaneous semi-carbonic maceration in closed concrete vats using only native yeasts. The grapes are pressed using a massive, 100-year-old manual wooden press. Vinification proceeds completely without inputs, temperature control, pumping, or punching down (pigeage).
