Kikkawa also polishes the rice to just 90% — the opposite of the usual 'more polish, cleaner taste' logic — fermenting slowly at 6-7°C to draw out the rice's full character while controlling for the rougher notes a low polish can bring.\u003c\/p\u003e\n\u003cp\u003eThe sake's natural rose-pink colour comes from Shifukumochi, an ancient, pesticide-free purple rice grown at a local Isehara farm and added late in the brew (yodan-mai) — not a dye or additive. Kikkawa Jozo has brewed at the foot of Mt. Afuri in Kanagawa since 1912, using the mountain's notably hard spring water; 'Afuri,' the brand, is named for the mountain itself.\u003c\/p\u003e\n\u003cp\u003eFloral, mellow and gently sweet, with a soft mouthfeel from the low ABV and low polish — good served well-chilled in a champagne glass.
