Kanonkop Kadette Cape Blend

The Cape Blend category requires a minimum Pinotage component of 30%. In the Kadette, the Pinotage element is rounded off with oak aged Cabernet Sauvignon, Cabernet Franc and Merlot. This results in an opulent red wine offering an array of red and black fruit flavours underscored by depth and complexity.

Bright ruby colour. Attractive nose of red currants, cherries, spice and a touch of mocha. The palate is lively and fresh, with succulent raspberry and measured oak flavours. The red fruit compote is supported by a firm and silky tannin structure. Savoury notes persist on the lengthy finish.
Secret serving tips: Chill it down for a refreshing summer drink with seafood, or serve at room temperature when paired with pizza, pasta, stews, roast chicken and barbequed meat.

The blend comprises of 37% Pinotage, 33% Cabernet Sauvignon, 26% Merlot, 3% Cabernet Franc, 1% Petit Verdot. All the grapes are picked by hand and placed into 18kg lug-boxes. At the cellar, the bunches are de-stalked and go through three stages of sorting: sorting machine, vibrating table and computer-controlled optical sorter. The crushed fruit is pumped into open top concrete fermenters (each holding 10 tons), where maceration occurs for 3–5 days on skins at 28°C. To ensure optimum yet delicate tannin and colour extraction, the cap was punched down manually every 2 hours. Finally, the wine was matured for 12 months in 2nd and 3rd fill 225L French Nevers oak barrels. This wine will keep developing in the bottle for the next 5–7 years.
