Description
Jean-Max Roger Cuvée Marnes et Caillottes Sancerre
The classic Jean-Max Cuvée Marnes et Caillottes Sancerre is an incredibly appetizing and well balanced wine with finesse from its terriors. Aromas of citrus and minerality lead to a brilliant refreshing finish. The invigorating acidity and bright texture give this bottle a fine balance and immediate attraction.
This white is a blend of Sauvignon Blanc hailing from two types of terriors – marls and stony calcareous “caillottes”, which enhances the wine’s complexity. The finesse and fruit from the “caillottes”wines are complemented by the power and length of the marls. This wine has an ageing potential of 3 – 15 years to express all of its complexity.
The grapes undergo immediate pneumatic press and cold settlement between 48 – 72h. This is to protect the fruits against deterioration of aromas and eliminate vegetal fragments and dusts. The aromas and complexity is developed through long fermentation by natural yeasts with temperature control. Ageing on heavy lees of fermentation until the first racking which occurred between February and April. Fining and filtration before bottling and stocked for two months before release.
