Ibaraki Tokumasamune Junmai Ginjo Omachi

Made with 100% Omachi Rice, this full-bodied Junmai Ginjo has a soft and gentle flavor. The nature of the rice, causes it to melt easily, this brings out a wide variety of umami and the environment of each brewery allows the Omachi to express differently. Due to this level of complexity, it has a long after-taste with multiple transitions of flavours.

Sake is brewed with only rice and water, in order to differentiate the taste and uniqueness of each bottle, the types of both ingredients affect the end results tremendously. Omachi only accounts for 3% of the sake production quantity. This is because it is not an easy crop to farm - it is one of the tallest crops with the heaviest grains. Farmers require an enormous effort and time to sustain the stems.
Production of sake is also challenging and requires endurance and skills. As the Omachi Rice absorbs water quicker than other rice, the brewers need to be meticulous about the duration required to soak the rice. During Shubo production, a high concentration of rice is required as the grains are very soft and melt easily. The more rice is melted in the barrel, the sweeter the taste. Brewers will need to control the procedure with precision to avoid producing sake that is too sweet. The meticulous process to grow and brew the Omachi Rice is why Omachi sake is so premium.
