François Écot Sapucai Blanc 2021
François Écot Sapucai Blanc has a condensed citrus fruit flavour reminiscent of freshly picked mandarins and pomelo.
Blend of Xarel-lo and Muscat de Alexandria. The fruit comes from vines growing at a 400 metre altitude on limestone soils in Penedès, Spain. Burgundy experienced terrible weather in 2021, which meant the grapes were in a devastating state. François approached his friend Manel from Spain and a miraculous collaboration was realised!
The wine is made in winemaker François Écot's home on the edge of Chablis, in Mailly-le-Château. The small garage-like vat room was a stone barn in another life. Handpicking and vinification. Destemming and maceration of Xarel-lo in 400HL amphora. Muscat de Alexandria goes through 80% direct pressing, destemming of 20% and maceration in stainless steel tanks. Blending and ageing of the wine in 15HL wooden barrels.
